Recipe for Italian scrambled eggs.

I submitted my Italian scrambled egg recipe to All Recipes, and haven't heard if they are going to publish it or not. When I made it last night for me and Bob he wanted sausage scrambled in with the eggs, so I added that. I put some oregano, some fennel and some crushed red pepper in with the sausage while it fried, and it was pretty good. I'll make it that way again.


Scrambled Eggs Alfredo
Creamy, delicious scrambled eggs with an Italian flair.

This is for 2 servings.

INGREDIENTS:
6 large eggs
1/2 cup prepared alfredo sauce
1 tsp dried oregano
1/2 roasted red pepper, chopped
salt & pepper to taste
1T olive oil
1T butter
1/2 cup additional alfredo sauce
parmesan cheese (opt)

DIRECTIONS:
In bowl, combine eggs, 1/2 cup Alfredo sauce, oregano, red pepper, salt and pepper and whisk until smooth. In pan, heat olive oil and butter over medium heat. Add eggs and scramble, keeping heat medium to medium-low for the best consistency. In small pan, heat additional alfredo sauce. Transfer eggs to plates and top with additional alfredo sauce. Sprinkle with parmasean if desired.

Note: As I said, I added about 1/2 lb. of crumbled, fried, whole hog sausage to this recipe and Bob loved it. I added about 1/2 teaspoon each of dried oregano, fennel seed (crunched it up in my hand) and red pepper flakes. But I suppose if you used bulk Italian sausage you wouldn't need these spices because they'd already be in there.
